Robertson’s dining scene has a stylish new addition with Gibson of Robertson, opening at the former Pecora site.

Owner Adam Towers, formerly of the iconic Red Lantern in Sydney, which recently closed after 25 years, welcomed guests with a feast of cocktails and snacks.

The remodelled space drew a lively crowd on opening night, creating an atmosphere reminiscent of a Sydney night out.
Renowned for its dynamic, ever-evolving menu and the vibrancy of South East Asian street food with a refined culinary approach, Red Lantern set a high standard.

With Gibson of Robertson, Adam brings the same energy to the Southern Highlands—offering a space for casual after-work drinks, high end meets and a cafe in day time hours.
Adam’s move to Robertson marks a new beginning, blending his passion for flavour and hospitality with a warm, local vibe.
